The mature white grapes are gently pressed and the juice then filtered. The fermentation takes place both in stainless steel tanks and in traditional wooden barrels spontaneously with loads of natural yeasts from the vineyard creating a sweet, delicious wine to use as an aperitif or dessert wine.
