Situated in Noblejas near Toledo one hour south of Madrid, the Muñoz business and winery was founded in 1940 by Blas Muñoz. The original part of the winery still remains, being used now for bulk and barrel storage as the business expands. Production is concentrated in their new facility which was BRC and ISO 9001 accredited in 2008, and which has an eight million litre capacity.
The company today is managed by the grandson of Blas, Bienvenido Muñoz Pollo, with over 80% of its production exported to 35 countries.
La Mancha, meaning parched earth is the largest single demarcated wine region in Europe, positioned in the heart of Spain. Hot dry summers mean disease and pest risk is low and use of pesticides and fungicides minimal, although winters can be very cold and frost can be a problem. The Muñoz family owns a 45 hectare estate planted with Spanish and international grape varieties, with some vines over 50 years old. Long term contracted growers supply the balance of their grape requirements, and with an incentive scheme for grape quality in place, Muñoz ensure they obtain the best grapes from their growers before the balance is sold off to bulk producers in the region.

The harvest began around September 25, approximately 15 days later than the previous year, resulting from more benign temperatures throughout the year, particularly in summer, which allowed a more natural and slower maturation. These climatic conditions allowed the grapes to arrive in the winery with a perfect ripeness, ideal for the elaboration of quality wines, with excellent colour and good structure and balance. The grapes were lightly pressed to obtain the free run must, which is then fined over 48 hours. The fermentation takes place in stainless steel at 15º C.
