The 300 hectare vineyards of the Quattrocchi estate extend west from the warm sands of the desert and are framed by the Andes Cordillera some 800m above sea level. The harvest is by hand to guarantee that each bunch of grapes is treated gently and then taken quickly to the winery. This helps prevent the grapes from excessive warming or dust contamination.
With a 60,000 hectolitre capacity the Quattrocchi winery features state-of-the-art Italian wine technology comprising epoxy-coated concrete tanks, stainless steel tanks and traditional oak barrels.
The white grapes are cooled prior to pressing to obtain maximum aroma extraction. Red grapes are crushed into the epoxy-coated tanks and refrigerated pre-maceration to extract maximum taste and aromas, they are vinified with selected yeasts.
The Quattrocchi winery has over a 6 million litre fermentation and preservation capacity. This includes the new stainless steel tanks, an underground barrel room and a stowage room adding to the existing family cellar.
Quality control is carried out in a fully equipped laboratory with state-of-the-art spectophotometer and distillators. As well as routine analyses, both physico-chemical and micro-biological research and development studies are performed to ensure the Quattrocchi winery stays at the forefront of wine production.
