Recipe : Lemon & Almond Madeleines

75g Butter
3 Eggs
80g Caster sugar
40g Ground almonds
80g Plain flour
Zest of lemon or orange
1 Cardamom pod


Heat butter till nutty brown in colour

Whisk eggs & sugar to ribbon stage. Gradually combine ground almonds and zest, fold into whisked egg mixture until incorporated.

Slowly fold in melted butter

Leave mixture covered for 2 hours

Bake 8-10 mins at 190oC
