The Estate is continually striving to achieve the best possible fruit, involving use of many different varieties, with many different clones.

Vineyard Manager and Owner Pat Murphy, has over 30 years experience in Viticulture, and this definitely shows in the Trentham award winning wines. Known for their full flavour, structure and varietal character, it certainly proves that "Good wines are made in the Vineyard".

Almost half a century ago, the first vines were planted at Trentham Cliffs in far west New South Wales. Jack Murphy instilled his knowledge of viticulture to the family, who established Trentham Estate. The vineyard flourished in the rich red loam over limestone soils, nurtured by water from the magnificent Murray River.

Today the Murphy family continues the tradition at Trentham Estate.

This rare grape originates from the famous Rhone Valley in France and has the reputation of making some of the most exotic wines in the world. The Trentham estate was able to source the recently released "virus free" Viognier cutting from CSIRO at Merbein, Victoria - this has resulted in strong healthy vines with beautifully balanced fruit.

Immediately after harvest the grapes we de-stemmed, crushed and the must chilled and placed in the press. The skins were pressed and the cold juice settled for 36 hours.

Once clarified, the juice was fermented with selected yeast for 3 weeks until dryness. Following fermentation the wines chilled and allowed to settle before racking, blending and bottling. The wine-making did not invlove and wood ageing or malolactic fermentation.

Trentham Viognier typifies the character of the variety and shows shows why this variety has so much promise for the future. This wine has exotic fragrant aromas of apricot and peach with a full soft palate finishing dry.

Pinot Noir has been referred to as the noblest of all grape varieties, making some of the most famous of all red wines but it is difficult to grow and make. The Trentham 2004 Pinot Noir is made from four different clones which produce grapes of varying colour and flavour which adds complexity and weight to the final wine.

A majority of the grapes were harvested in late March during the early morning. The grapes were well coloured and ripe at 13.8 Baume.

The grapes were de-stemmed, lightly crushed and allowed to 'cold soak' for 36 hours before yeasting with a Burgundy yeast. Fermentation was at moderate temperatures before pressing and finishing the fermentation in French oak. After a short 8 month maturation period the wine was blended and bottled in February 2005

The combination of good ripe fruit and careful handling has produced attractive berry fruit flavours and toasty oak aromas with a very soft lingering finish

This Trentham Petit Verdot is the latest release and shows dark vibrant red purple colour with fragrant berry fruits. The palate is spicy, rich, soft and full with fine firm tannins on the finish and is an excellent example of this great variety

The Grapes
An excellent 'older' variety from Bordeaux in France where the grapes' dark thick skins produce deeply coloured, spicy and fragrant wines. It is an ideal variety for warmer regions due to its late ripening and very good acid and sugar balance. A variety we will see more of as its quality is realised

The Harvest
The season produced our third vintage of fruit for winemaking and was harvested on 9th March at 13.8 degrees B. This harvest date was unusually early due to the very light crop. The grapes were beautifully coloured and in excellent condition

The Winemaking
Following our traditional winemaking techniques, the grapes were crushed, fermented on skins for 10 days to extract colour and flavour, before pressing and transferring to French oak barrels

The Estate has been producing a Noble Taminga for over ten years and the aim is to capture the exotic fruit flavours of this variety, without too much over-riding botrytis character.

Description
Unlike many Australian sweet white styles, the Noble Taminga is very much a 'fruit drive' wine without dominating botrytis characters or excessive sweetness. This is one of the best Tamingas we have made to date and shows excellent fruit and balanced sweetness. The wine displays lifted citrus and apricot aromas with luscious sweetness and balanced acidity.

The Grapes
This exciting variety was developed by the CSIRO at Merbein by cross breeding three different varieties - Riesling, Farana (a Spanish variety) and Traminer.

The Harvest
The season was very mild with the Taminga maturing late. One half of the grapes were harvested on the 23rd May, with moderate botrytis, and the balance harvested on the 12th June, with a fairly heavy amount of infection.

The Winemaking
After harvesting the grapes were de-stemmed, crushed and pressed. The juice was cold settled to clarify then fermented with a neutral yeast until the fermentation stopped at 6.5º The finished wine was allowed to settle and bottled without any wood maturation.

All fruit is harvested in the early morning, crushed, the must is chilled and pressed. The juice is settled to clarify. Their quality grapes have produced an appealing Chardonnay with clean crisp characters of mango and melon. An easy drinking wine which is best whilst young.

Following the harvest the grapes were crushed, de-stemmed and pumped into tanks for fermentation. Traditional fermentation techniques of pumping over to extract colour and flavour were followed before the skins were pressed. Bright red colour showing ripe berry fruit aromas and a soft rich taste.
