The grapes are subjected to a soft crush in horizontal presses. Fermentation occurs at a temperature of about 18-20c in order to preserve the fruitiness and the finest sensory characteristics of the wine. The process begins with the injection of selected yeasts that guarantee maximum quality in aromas and flavours. The wine remains on the natural yeasts for a determined period and, in the spring following the vintage, it is sterile bottled at a low temperature.

The colour of Insolia is straw yellow, enlivened by luminous reflections that emphasise the special brilliance. The bouquest of this Torre Solaria wine is fascinating due to its unusual freshness and youthfulness, its pronounced finesse, fruitiness and its enticing persistence. The delicately dry flavour of Insolia is due to an excellent acidic balance and elegant aftertatse that is clean, appealling and appropriately persistent.

Torre Solaria Insolia is an extremely versatile wine. Harmonious and satifying as an aperitif, it combines superbly with appetisers, especially when fish-based.

After removal of the stalks and soft pressing, fermentation lasts 8 days at a controlled temperature of 25-28c according to traditional principles but with the use of rotating horizontal fermentation tanks and delicate maceration of the skins for 1 week to assure the wine colours, aromas and fundamental elements of which it is has need. Once the sugar has been converted to alcohol, the wine is racked into oak casks where it completes its maturation.

Torre Solaria Nero d'Avola is relatively dark in colour but brilliant ruby red. The nose is broad and persistent, with evident and intense spicy scents as well as notes of almond blossoms.

The flavour of Nero d'Avola is dry and structured and hows outstanding roundness. The wine offers a sensation of complex fruitiness resembling that of cherries preserved in spirit, alternating with pleasant and highly persitent hints of spices. This full bodied wine expresses itself best when served with oven roasted meats, savoury sauces and game.

The Primitivo grapes for Torre Solaria are carefully harvested and subjected to a soft crush in horizontal presses. Fermentation lasts 8 days and occurs at a controlled temperature of 25c - 28c. After the alcoholic fermentation is over, the wine undergoes the malolactic fermentation, a process that lowers total acidity and makes the wine rounder and fuller in flavour.

Relatively dark in colour but brilliant ruby red. The Torre Solaria Primitivo offers expansive and persistent hints of fully ripe red fruits on the nose. Dry with a fine structure and outstanding roundness. It shows a complex fruitiness on the palate that is long and sublime.

Serve with read meats as well as feathered and furry game, savoury sauces and moderately aged cheeses.
