Koos Bosman, Stormhoek's senior winemaker, carefully selected the 2 best block of Pinotage from the Stormhoek propert in Wellington. The 2 blocks add differing elements to the resulting wine - the dense, complex fruit if old blocks and the concentrated, fresh flavours of a younger block. Only perfectly ripe fruit from these two blocks were selected for the special Stormhoek treatment.
Pinotage is South Africa's contribution to the work of wine flavours. In 1936, a South African viticulturist introduced the genes of Pinot Noir to those of Cinsault and presented the world with Pinotage. The oval-shaped berries have thick skins, dense with crimson colour and are rich with succulent fruit flavours that are enhanced with subtle use of oak.
The mash was fermented with a small amount of French oak. The temperature of the must was maintained at 10 degrees Centigrade for 2 days. The juice was pumped around several times a day to extract colour and flavour from the skins before fermentation. The temperature was allowed to rise, yeast added and fermentation took place at a comparatively rapid rate. The cap was frequently soaked with the must during the early stages of fermentation. 30% was the matured in barrel for 6 months whilst the remainder matured in tank.
The wine remained in contact with fine fermentation lees for retention of freshness until the blending process is complete. The lees are removed during a light filtration before bottling.
Complex spicy nose. Rich, intense, dark fruit flavours of cassis and damson. Well structured with smooth tannins, fine weight and well integrated oak are the hallmarks of Stormhoek Siren Pinotage.
