Wine Notes
The 2008 Hawkes Bay Sauvignon Blanc is a youthful wine, with fine acidity and length. Aromas of passionfruit and tangelo are present on the nose, whilst the palate is refreshing with a lively citrus and melon finish and sweet yeasty notes.

Food match
Bright fruit character and crisp acidity create an elegant and refreshing wine that is a versatile accompaniment to many foods. Try line caught snapper, grilled on the BBQ dressed with New Zealand extra virgin olive oil and a squeeze of lemon. Also pairs well with all types of Asian cuisine and seafood, or try it with a cheese quesadilla and green salad.

Viticulture
Fruit for Stone Paddock Sauvignon Blanc is grown on the red and grey metal soils of the Paritua Vineyard estate, allowing for good drainage and ripening. Intensive canopy management provides good balance between varietal herbaceous notes and ripe, tropical characters. The 2008 harvest was relatively early and is characterized by crisp citrus flavours.

Cellaring Potential
This Sauvignon Blanc shows great aromatics and can be enjoyed young. Some aging may enhance the weight and structure of this wine.

Winemaking
Grapes were de-stemmed and crushed to press. 90% of the juice was fermented in stainless steel with the remaining juice barrel fermented to enhance weight and complexity. After ferment the wine was left on yeast lees for 3 months. The focus is on clean varietal flavours, fresh fruit and richness on the palate. Bottled in September of 2008.
