This fine Semillon Sauvignon Blanc displays an elegant lime like character. Refreshing and flavoursome on the palate, it has an underlying mineral, crisp, balanced finish. Ideal for drinking immediately, this wine can be carefully cellared for a further 12 months.

Following crushing of selected parcels of fruit, they were immediately chilled then pressed under inert conditions. The juice was again chilled to 6 C and left to settle for a period of 3 days prior to racking and subsequent warming of the clarified juice. The juice was inoculated with a selected varietal specific yeast - a yeast that enhances and releases the natural characteristics of these classic varieties, with aromas of lime & tropical notes.

The parcels of Semillon and Sauvignon Blanc were fermented separately, between 12 -14C. During this time the ferment was monitored constantly so as to ensure an even degradation of grape sugar. The wines were then matured under cool temperature conditions, prior to blending of only the finest free run components, then fined and filtered prior to bottling

Simon Gilbert Chardonnay

This medium-bodied Chardonnay has a lifted tropical melon fruit aroma. It has a round and full flavour, enhanced by a hint of oak, and a balanced, long finish. This fine wine can be enjoyed immediately or will continue to improve with careful cellaring for up to three years.

Selected parcels of fruit were immediately chilled after picking, then pressed under inert conditions. The juice was again chilled to 6 C and left to settle for a period of 3 days prior to racking and subsequent warming of the clarified juice. The juice was inoculated with a selected varietal specific yeast; a yeast that enhances and releases the natural characteristics of this classic variety, providing aromas of melon and enhancing the wine’s structure.

The parcels of Chardonnay from the many blocks were then fermented separately, between 13 -15 C. During this time the ferment was monitored constantly so as to ensure an even degradation of grape sugar. Selected parcels were allowed to remain on light lees for up to 3 months during which time malolactic fermentation was induced, in conjunction with the finest French oak, so as to allow for the development of added complexity and structure. The wines were then matured under cool temperature conditions, prior to blending of only the finest components, then fined and filtered prior to bottling.

Orange did a little better for rain than many parts of the state, but conditions were still unusually dry. Apart from a hot spell in January, the summer was pleasantly mild. Vintage started very early in the low altitude vineyards and the results were very good, with chardonnay and shiraz the highlights. The cooler, high altitude vineyards were less consistent, particularly with whites, as scattered rain in late February disrupted the picking. However, some have produced excellent wines, notably reds, which combine intense flavour with elegance.

Simon Gilbert Riesling

This wine has attractive fragrant floral notes so typical of the Riesling grape variety grown in a cool climate. The palate has distinctive lime citrus flavours with a backdrop of fruit salad complexity. At the upper end of the dry wine category the slight residual sugar (7.1 g/L) gives the wines a richness of flavour and is balanced with a crisp acidity.

The season was basically mild and dry after a bout of rain and hail storms late January. Fortunately none of our vineyards were affected either in Orange or Mudgee. The fruit ripened well and the Riesling was picked mid April in very good condition.

Following crushing and must chilling to 10 C, the juice was clarified with enzymes for 4 days and then inoculated with yeast and fermented at 14 C for three weeks using RHST, a yeast strain selected in Germany. On the completion of fermentation the wine was clarified, stabilised and bottled to retain the fresh fruit characters of the Riesling fruit.

Deep crimson with purple hues, this fine wine has a soft plum and forest fruit flavour, with underlying oak and a soft tannin finish provided by maturation in French oak. Enjoy this wine immediately or cellar for up to three years.

Following crushing, the selected parcels of fruit were cold soaked at 12 C for 48 hours, warmed to 18 C, and inoculated with a selected, Bordeaux specific yeast a yeast that enhances and releases the natural characteristics of these two classic varieties aromas of cassis, berry fruits, colour intensity and structure. The parcels of Cabernet and Merlot from the many blocks were then fermented separately, between 20 - 24 C for a period of 8 - 10 days on skins prior to pressing.

During this time cap management and pH & temperature control is critical. Selected parcels were allowed to remain on skins for up to 28 days so as to allow for added complexity and structure. Following fermentation on skins, the fruit was pressed, and the drainings & pressing were combined and inoculated with a selected malo-lactic culture, then matured for a period of 18 months. The finest components were then blended, fined and filtered prior to bottling in October.

Cabernet Sauvignon 56%, Merlot 42%, Petit Verdot 2%
