This medium-bodied Chardonnay has a lifted tropical melon fruit aroma. It has a round and full flavour, enhanced by a hint of oak, and a balanced, long finish. This fine wine can be enjoyed immediately or will continue to improve with careful cellaring for up to three years.
Selected parcels of fruit were immediately chilled after picking, then pressed under inert conditions. The juice was again chilled to 6 C and left to settle for a period of 3 days prior to racking and subsequent warming of the clarified juice. The juice was inoculated with a selected varietal specific yeast; a yeast that enhances and releases the natural characteristics of this classic variety, providing aromas of melon and enhancing the wines structure.
The parcels of Chardonnay from the many blocks were then fermented separately, between 13 -15 C. During this time the ferment was monitored constantly so as to ensure an even degradation of grape sugar. Selected parcels were allowed to remain on light lees for up to 3 months during which time malolactic fermentation was induced, in conjunction with the finest French oak, so as to allow for the development of added complexity and structure. The wines were then matured under cool temperature conditions, prior to blending of only the finest components, then fined and filtered prior to bottling.
Orange did a little better for rain than many parts of the state, but conditions were still unusually dry. Apart from a hot spell in January, the summer was pleasantly mild. Vintage started very early in the low altitude vineyards and the results were very good, with chardonnay and shiraz the highlights. The cooler, high altitude vineyards were less consistent, particularly with whites, as scattered rain in late February disrupted the picking. However, some have produced excellent wines, notably reds, which combine intense flavour with elegance.
