The vines of the white Sauvignon variety extend to Sainte-Gemme on Sancerrois on clay and limestone soils. These grapes produce a vivacious wine, fresh, lively and with a sharpness but a very delicate bouquet. The wine was fermented in low temperature stainless steel vats, giving a wonderful nose of gooseberry and tropical fruit with weight and a flinty spine.
