The non grafted Sauvignon Blanc is remarkable in the sense that due to its age and the kind of planting, it allowed us to obtain some aromas that we didn’t know so far, such as green tomato aromas, which naturally adds more complexity to the final blending.

Destemming. Skin contact during 4 hours maximum. Pneumatic pressing ; we keep the first juice. Settling of the must at 10°C to clarify the wine; filtration of the deposits. Fermentation at 16°C with selected yeasts (VL3), during 15 to 22 days, depending on the vats. Vinification and lee ageing during 2 months, in stainless steel vats.

Colour: Crystalline with deep green glints.

Nose: gooseberry, boxwood, citrus fruits, tropical fruit with slightly smokes notes.

Palate: Fruity and vivid, with a good length

Food & wine pairing: it will pair very well with fish, sushi, sashimi, monkfish, seafood and clams, asparagus and salads.
