Winemakers Comments:- Fresh ripe red berry and blackberry fruit. Sweet smoke and ripe. Well-built.

Cold maceration takes place before fermentation for 48 hours.The winemaking process is carried out in stainless steel tanks and macerated for 15 to 20 days. The new wine, after malolactic fermentation, is matured for 10 to 14 months in stainless steel tanks. Part of this wine, 40% is matured in oak barrels for ten months in order to accomplish its structure.

This wine is ideal with wild or red meats, spicy pastas and fine fermented cheeses or Roquefort.
