A floral, fragrant white wine made from the red-skinned Rossola and Pignolo grapes in the hills of Valtellina made by Conti Sertoli Salils.

Some vineyards in Valtellina specialize in the local varieties of red-skinned grapes such as Rossola and Pignola, appreciated for their aromatic delicacy.
These grapes must be picked at the correct moment of maturity to create a wine with floral and fruity perfumes.
The grapes are pressed very gently, and the must remains in contact with the skins for eight to ten hours to obtain the first aromatic extraction
Then a part of the must is allowed to rest for a long time in its own yeasts, while the rest is fermented directly in barriques. Before bottling, the two parts are assembled to increase the harmony and fullness of flavour.
This wine is distinguished by an aromatic delicacy, and can be enjoyed both when young and after several years’ ageing in the bottle.
It has a fragrant, aromatic nose and soft acidity, with delicious red fruit flavours, which come unexpectedly, due to the pale colour of the wine.

Made from air-dried Nebbiolo grapes grown in the rocky terraces of Valtellina, this is one of the rarest and most singular wines of Italy.

One of the rarest and most exquisite wines in Italy. Made from Nebbiolo (known as Chiavennasca in the region) grapes that have been air-dried for 4-5 months on the "mantevole" (wooden racks) before fermentation, in a process which is known in Italy as appassimento , the same process used to create the famous Amarone wine.

It has then been aged for 18 months in oak and for at least a further 2 years in bottle (Conti Sertoli Salis never releases the wine onto the market until it is ready for drinking, which is sometimes up to 4 years in bottle before release).

A rich wine with powerful aromas of ripe black fruits, dark chocolate and a hint of spices. It has an ethereal quality about it, and while full-bodied and complex it is still very elegant. A wonderful accompaniment to game, mushrooms and also blue cheese.

Grillo is an indigenous grape variety of Sicily which is now mostly grown by small, quality producers. This example has notes of honeysuckle on the nose and a rich flavour of tropical and citrus fruits. The vineyard is located near the salt pans of Marsala and this is evident in the wine as there is a wonderful salty tang to the finish. Organic production.

Moziese, a tiny 7 hectar farm just off the coast of the Island of Mozia, produces only two wines, but which truly reflect the characteristics of the grapes and typical Sicilian territory.

Characteristics: It has yellow colour the large and persistent perfume, with fruity notes, the flavour is harmonious, fruity and charming. To be stored in a cool place.

This is the greatest Sicilian grape variety. This 7 hectare farm only produces 6000 bottles a year, and the wine is stunning. It is beautifully elegant, with layers of flavour. There is plenty of ripe fruit and a note of black pepper, and the tannins are soft and well-integrated. This is a wonderful accompaniment to fillet steak. Organic production.

Characteristics: Intense ruby red colour, fragrant with broad intense notes of ripe fruit, the flavour is elegant in its complexity, with good acidity, tempered by a sweet sensation of tannins.

Production area: In the vineyards of the town of Marsala (TP), namely the C / da Granatello.

Density: Planting: 4000 plants per hectare

Yield per hectare: 80 QLI

Type of ground: average Calcareous

System: counter, Guyot

Harvest: First half of September

Production technology: The grapes are harvested by hand and placed in 15 kg boxes , the grapes are brought to the cellar press de-stemmed, put into tanks where the fermentation and maceration takes place with the skins at 28° C for about 10 days. After this period the macerated grapes are soft pressed and the must obtained, then begins the malolactic fermentation.

Deep ruby red colour. Bouquet: jam, dried flowers, tobacco and chocolate; these fragrances come back in the flavour which is elegant and smooth.

Area of vines: 2 hectares

Grape type: 75% Corvina, 25% Rondinella and 5% others, drying out till end of January / beginning of February

Soil type: Calcareous-silt-clay

Exposure: South west (238 meters a.s.l.)

Fermentation with selected yeasts in controlled temperature (24°C) in steel vats with gentle breaking up of the marc with air for 12 days.
The wine is then put into new barriques for 30 months then 6 months in bottles.

Drying out: Use of natural methods in boxes in racks in well aired environment with periodic control of the state of the grapes. Pressing at the middle or end of January depending on the year.

Accompaniement : dishes of game, braised meat, stews and mature cheeses. Excellent at the end of a meal.

Valpolicella is an extraordinary wine as it comes in several guises. Many consider Amarone to be the best of all. The key to Amarone is the process of appassimento where by the healthy ripe grapes are picked at normal harvest time but then left to dry or appassire in a well-ventilated place, so that they become dehydrated and raisin-like. They are finally pressed early in the New Year. The wine is then aged in barrel for at least three years. This example is deep in colour, with rich cherry notes on the nose, while the palate is beautifully rounded and dense, with intense fruit and layers of flavour and some tannin. It needs warming winter dishes or firm cheeses to tame the flavours.

Award-winning Valpolicella from Roberto Mazzi, who owns this tiny six-hectare farm in the Veneto. He has nicknamed this wine the “fratello giovane” (younger brother) of Amarone, as this unique Valpolicella is made purely from grapes that have undergone a light air-drying for forty days. This gives a wonderful concentration of flavour. It is full-bodied yet extremely elegant, with very smooth tannins and a ripe berry flavour that opens up wonderfully on the palate.

Production zone: Negrar

Growth: Calcarole, Poiega, Sanperetto, Villa

Area of vines: 6 hectares

Type of grapes: 70% Corvina, 25% Rondinella and 5% Molinara

Type of soil: Calcareous - silt - clay

Exposure: South west (204/238 meters a.s.l.)

Fermentation with selected yeast at controlled temperature (24°C.) in medium sized steel vats with daily “follatura” for 7 days, following which malolatic fermentation to lower the total acidity of the wine. The wine is then put into oak barrels for 12 months.

Characteristics: Ruby red with bouquet of cherries, violets and pepper. Full bodied taste, slightly acid with a slight bitter aftertaste due to the type of soil.
Use: As aperitif slightly cooled, serve with white or grilled meats.

After Brunello, Vino Nobile di Montepulciano is one of the most celebrated Tuscan wines. Made using a different clone of the Sangiovese grape, known as Prugnolo Gentile, this wine is full and round with beautiful ripe berry fruit on the nose and palate. The tannins give the wine structure, but are well-integrated and smooth, and the wine has a long, perfumed finish. Organic production.

Casella was one of the first farms in Montepulciano to embrace organic viticulture. The wine is produced after a long fermentation; it is aged in barrels for at least 2 years and then 6 months in bottles, to obtain a delicate and persistent perfumed wine, which hints of violet and fruits of the forest, with a dry and elegant flavour.

near the village of Trequanda, not far from Montalcino and Montepulciano, but in a corner of Tuscany, not usually associated with viticulture, so without either a DOC or DOCG. Hence this wine is an IGT (Indicazione Geografica Tipica, and the Italian equivalent of vin de pays) and made from Merlot, rather than the ubiquitous Sangiovese, that virtually dominates all the DOC (G)s of Tuscany . The wine has a deep young colour, with some perfumed, plummy fruit which follows through on the palate. The fruit is nicely balanced with tannin and acidity, with a firm finish.

"Brunello di Montalcino is one of the great wines of Tuscany, the pioneering example of pure Sangiovese long before anyone had thought of Super Tuscans. In recent years there was been an enormous growth in the number of small wine growers around Montalcino, prompted by the success of Brunello."

"The Pinti family at Pian delle Querci is one of the newer producers; with 2001 the first vintage they bottled. Ageing methods in Brunello can vary quite considerably, from new French barriques to old Slavonic oak botti (large barrels) as well as a period of bottle ageing. At Pian delle Querci they favour 36 months ageing in traditional 50 hectolitre botti of Slavonic oak. This means that the wine has softened over the months and is less structured than some. 2003 was the heat wave vintage, but the wine happily lacks the raisiny notes that excess heat can bring. It is rounded with a backbone of tannin, balanced by some nicely evolving fruit."

Appearance : red ruby colour with light garnet shades a good coloured and concentrated intensity

Nose : iL Lago Chianti Rufina Riserva offers a variegated and ample presence of scents from the harvest of ripe fruits to preserves of small wild fruit berries together with a typologic identification of ripe cherries

Palate : dry with a good structure and an excellent alcoholic presence that renders it delicate and at the same time well balanced. The aftertaste is persistent denoting a fine harmony between fragrance and taste

Vinification : Harvesting is done by hand and produced by using extremely delicate methods of production. The maceration process takes place in stainless-steel vats and is then periodically amalgamated so as to obtain a higher extraction of the colour and of scent. During this period that lasts about 20 days the wine terminates its alcoholic fermentation at a temperature of approximatetely 28°. The wine is subsequently in part placed in new French “barriques” (Allier and Troncasse) and the other part is placed in second-hand used “barriques” for a duration of eighteen months
