At the winery the clusters were gently de-stemed into open fermenters. After a five day cold soak the must was allowed to warm and commence fermentation un-inoculated. The fermenting must was hand plunged 2-3 times a day to extract the colour, flavour and tannin structure. After fermentation the must was pressed into a mix of new and used French oak barrels.
