This Shiraz Cabernet is a well-structured style that offers enjoyable drinking. It shows warm generous fruit with ripe plum and berry fruits, all balanced by a silky palate and fine-grained tannins.
The Grapes
Considered something of an 'Australian Blend', Shiraz Cabernet has won the hearts of many red wine drinkers over the years with its generous full fruit flavour. Selected from our own vineyards, this wine is a blend of 60% Shiraz and 40% Cabernet Sauvignon.
The Harvest
Both varieties were harvested in mid March at 13.5º and 13.0º beaume respectively. The grapes were machine harvested in the cool of the morning and transported immediately to the winery.
The Winemaking
The grapes were de-stemmed and crushed then fermented in stainless steel tanks for 6/8 days with twice daily pump-overs. The wines were separated from skins, the skin pressed and both wines pumped into French and American oak for 12 months maturation.
