The Sancerrois regions clay-limestone soils of Jurassic origin that are heavily strewn with stones are locally known as caillottes. They are found primarily on the mid-range hills at an altitude of between 150 and 250 metres.

It is in this type of soil found in the village of Bué and in the hamlet of Amigny (commune of Sancerre) that our estate grows the grapes that go into the production of the Les Caillottes cuvée.

Our Les Caillottes cuvée stands out for its fruity freshness and its finesse on the palate. It may be cellared for up to 5 years, but it is preferable to drink it within the first three years in order to best appreciate its freshness.

This wine should be served chilled at between 8 and 12°C. It may be enjoyed as an aperitif or as the perfect accompaniment to the bounty of the sea, including crustaceans, shellfish, and raw or cooked fish. It is also a good match for white meats (poultry, veal) and goats cheeses in particular.
