Soil :
The Estate is on a plateau, called a "causse", and the cliff at the end of it is close to the limit of the vineyards. Well drained, they force the vines to go deep to find water or moisture, and keep yields naturally low. Three varietals can be found on the estate : Carignan (around 80 years old), Grenache (around 50 years old), and young Syrah (20 years).
Wine :
The harvest is totally manual.
Breakdown of the varietals is :
Carignan : 40%
Grenache : 30%
Syrah : 30%
Total yield : 45Hl/ha
The three varietals are put together in the vat and undergo a carbonic maceration, between 12 and 14 days. Maturing in 2 to 5 year old oak vats for 8 months.
Drinking advice :
Serve between 16 and 18°C. Soft tannins give this wine a good structure, framing ripe red fruit, blackberry and blackcurrant. Very fragrant and highly enjoyable.
