Pale yellow with green hues. On the nose, fresh and powerful, with notes of gooseberry. On the palate, citric, with excellent acidity and notes of bananas. Long, agreeable finish.
Viñ Casa Silva own grapes are used for the Sauvignon blanc from the Colchagua Valley. Angostura Estate, original massal vines planted in 1912.
Hand sorting of grapes before destemming. Cold maceration in the press for 4 hours at a temperature under 8ºC using reductive method. Crushed and then run off for 24 hours
at 15°C. Alcoholic fermentation in stainless steel tanks for 15 days at 13ºC to 15°C.
This outstanding Sauvignon Blanc is the perfect match for seafood dishes, especially oysters and scallops. Enchanting with salmon ceviche or Caesar Salad, it also tastes superb with asparagus or cream cheese. Enjoy it on it's own too.
Characteristic varietal aromas: fresh, floral, citric, grapefruit and white peach. Very expressive and elegant. On the palate, firm but balanced acidity, ripe fruits with a hint of grapefruit and apricot. Refreshing with a elegant mineral touch and long finish.
