Don Cristóbal 1492 is an innovative, modern winery with a capacity of 800,000 litres, retaining the traditions of Mendoza and the best European oenological practices. It processes its own grapes, selecting and collecting the grapes by hand in 15 kilo boxes. The wines are matured in French Oak (90%) and American oak (10%) barrels for a minimum of 12 months. Mendoza, located at the foothill of the Andes, is beyond doubt, the most traditional and developed grape growing area of Argentina. Due to exceptional climatic conditions, the best and most prestigious wines are produced here.

This combination of Chardonnay, Chenin and Viognier results in a lively and charming white wine, with a bright greenish yellow color. Its aromas remind us of citrus and tropical fruit. It achieves an ideal balance due to its fresh acidity and its elegant sweet taste.

Harvest by hand of each variety separately in February, optimizing the aroma in each case. Raceme selection on conveyor belt, destemming and peel maceration. Cold pressing and subsequent lees removal in order to ferment the clear must.

Alcoholic fermentation for 18 days at an average temperature of 15°C. Once the wine is obtained, the assemblage of each varietal wine is made, seeking the perfect balance.

This elegant and harmonious wine from Mendoza-Argentina, results from the assemblage of Merlot, Bonarda and Sangiovese grapes. Having an intense and bright ruby red color, and ripe red fruit aromas, this wine is characterized by its soft tannins and its pleasant structure.

Harvest by hand of each variety separately in March and April, raceme selection, destemming. Must alcoholic fermentation at a controlled temperature between 24°C and 28°C. Average maceration of 20 days, subsequent malolactic fermentation and decanting in order to remove lees. Production finishes with the blend of wines to highlight the characteristics of each variety.

At sight, it has a yellow color with greenish highlights. Fine and fresh aromas reminding us of exotic fruits. In the palate, it is harmonious, fruity and balanced in acidity with a delicate finish in the mouth. Grapes are from our vineyard located in Campamentos-Rivadavia-Mendoza.

Raceme harvest by hand in February, subsequent selection on conveyor belt and destemming with state-of-the-art technology. Smooth grain pressing at a low temperature by means of a pneumatic press after peel maceration. Static must decanting after 24 hours. Fermentation at controlled temperatures between 16°C and 18°C, for 20 days to carry out the subsequent suspension process of fine lees.

Intense aromas and blackberry and dry plums flavors are combined for twelve months in new oak with tobacco and vanilla notes, offering great richness, sweetness and complexity.

Grape harvest by hand in April. Raceme and grain selection on mobile and vibrating tables to remove leaves and green parts.
Once in pool, must underwent a 4-day cold pre-fermentative maceration. After that, alcoholic fermentation of sugar took place spontaneously at a temperature between 26°C and 28°C. Maceration lasted 29 days and recoveries were made to favor the intimate contact of the wine and the skin.

When malolactic fermentation was finished the wine was placed in new oak barrels, where it was stored for 12 months until bottled.

At sight, it has intense and bright red purplish tones. Fine and elegant aroma with a perfect combination of ripe red fruits and spices, enriched by the French oak. In the mouth it is balanced with soft tannins.

Cold pre-fermentative maceration for 4 days and subsequent alcoholic fermentation at controlled temperatures between 26°C and 28°C, favoring the extraction of the finest substances of each grain. 28-day maceration for later drawing off and malolactic fermentation in pools. 20% of the wine was stored for 9 months in oak barrels combining the noble qualities of oak with the intense fruity aromas.

Don Cristobal - Wines from Argentina

History
Argentina`s cultural tradition is strongly linked to wine. The influence of the Latin civilizations of Spain and Italy have played a very important role in the country`s social, political and cultural development.

Long term friends Eduardo Lapania and Juan Bautista Pacella established Latinfina S.A as a joint project and each has a 50% share in the company. The vineyards and winery of Don Cristóbal 1492 were founded in 1988 and the first vintage to be produced was 2001. By using state-of-the-art technology and following the best traditions for the production of their wines, the Don Christóbal team (18 people in all), aim to develop the highest possible quality of wines.

Vineyards
Don Cristóbal has three estates dedicated to modern growing techniques:
La Niña yields outstanding red varieties from its` 17 hectares of old vines: Malbec, Merlot, Sangiovese and Syrah, irrigated by the Tunuyán river. The estate lies at 600m above sea level at Rodríguez Peña, Junin in the province of Mendoza.

La Pinta is located at Campamentos-Rivadavia in Mendoza province, at 620m above sea level. Chardonnay is planted on 16 hectares and Verdelho on 4 hectares, currently the only such vines in Argentina. The Portuguese variety of Verdelho is ideally suited to the soil and climate of Argentina, yielding a fruity stylish white. The vineyard also grows 13 hectares of Cabernet Sauvignon and 6 hectares of Merlot.

La Santa María lies at 935m above sea level in Ugarteche, Luján de Cuyo in the Mendoza region. It enjoys an exceptional climate with outstanding soil for Malbec, Argentina`s flagship variety. There are 20 hectares of Malbec, as well as 6 hectares of the Italian variety Bonarda and plantings of both Cabernet Sauvignon and Syrah.

The region of Mendoza, located at the foothill of the Andes at the border of Chile, is beyond doubt, the most traditional and developed grape growing area of Argentina. Due to exceptional climatic conditions, the best and most prestigious wines are produced here.

The estates are close to Mendoza City and only 2.5 hours from the Aconcagua, which at 7,000m (22,965ft) is the highest peak of the continent.
